Instead of making this a casserole, I knew I would be short on time. I changed the lasagna noodles to penne pasta and only used half of the spinach. If I put "too much" green "stuff" in the food, the kids get a little cagey about eating it. I needed this to be a slow cooker meal. I cooked and drained the pasta, then layered the remaining ingredients and put the cooker on low for 5 hours. Delish! Next time, I will try the original recipe, as it is written.

Pinterest Creamy White Chicken and Artichoke Lasagna
This was amazing. Absolutely, to die for, amazing! I messed up adapted the recipe to fit our schedule. In short, I didn't plan my menu well for that day.

The only change I would make to this recipe is would be to use only 1 can of cream of chicken and 1/2 cup more of sour cream. This cream of chicken was just too much. It masked some of the flavor this could have had. I had no left-overs. I believe this will freeze well. Great recipe if you are batch cooking. Comfort food at its best~

Pork Chop Potato Bake
- 6 pork chops (I like boneless loin 1/4-1/2" thick)
- 1/2 cup milk
- 1/2 cup sour cream
- 1/4 tsp. pepper
- 1 can cream of celery soup
- 1 24oz package of hash browns (thawed)
- 1 cup shredded cheddar cheese, divided
- 1 cup Durkee French Fried Onions, divided
Combine milk, sour cream, pepper, celery soup, 1/2 cup cheese, 1/2 cup French fried onions and hash browns. Mix well. Spray or grease a 9X13" baking dish. Spoon mixture and spread evenly in dish. Place pork chops on top of mixture. Cover and bake at 350 for 40 minutes. Remove cover and top with remaining cheese and onions. Return to oven, uncovered for an additional 10 minutes.

Shepard's Pie...my version
1 Lb. ground beef, browned and drained
1 small onion, dice
2 Tbsp. flour
1 Tbsp. ketcup
1 beef bouillon cube
3/4 cup water
frozen peas
frozen corn
1/4 cup worcestershire sauce
5 large potatoes
1 Tbsp butter
1/2 cup milk
1/2 cup shredded cheddar cheese
Peel potatoes and cube. Boil in salted water until soft. Drain, mash with milk and butter. Set aside. In the meantime, brown burger and drain. Add the next 8 ingredients. The amount of peas and corn is up to your taste. I also like to add some carrots. You could also add a can of drained, cooked carrots. Allow ingredients to simmer for 10-15 minutes. If mixture is too thick, add additional water and a dash more of worcestershire sauce. Spread potatoes on top of meat mixture and sprinkle with cheese. Bake at 350 for 25 minutes or until it just begins to bubble. Serve.
