1 Lb. Velveeta Cheese, cubed
1 Lb. Broccoli, chopped
4 cups chicken stock
2 cups milk
1 Tbsp. garlic, minced
1 small onion, diced
1/2 cup butter
Mashed Potato Flakes (opt)
Saute butter, onion and garlic until translucent. Add chicken stock, and milk. Let these simmer for a few minutes. Next, add broccoli. Add cheese about 1/2 hour before serving. Keep on simmer so the milk doesn't scorch. If soup is too runny, add mashed potato flakes a little at a time to thicken.
