Ham Pot Pie

This is a wonderful way to use a ham bone...

1 ham bone with meat
4-5 potatoes, peeled and cubed
1 medium onion
1 box of 2 roll out pie crust (uncooked) (I cheat, you can make your own pie crust)
salt and pepper ** see note on salt **

Cover ham bone with water and allow to slow boil until meat falls off the bone. This usually takes 3-4 hours, maybe longer. I start around noon to have this by 6ish. This depends on how much meat you've left on the bone. You may need to add water occasionally to keep enough covering the bone. Once the meat is coming off the bone with ease, remove the bone and grizzle from the water. Add potatoes and onion. Allow to cook until they are just starting to become soft. Roll out pie crust and cut into 1" squares and drop into boiling water along with ham and potatoes. You will use both pie crusts. Lower to a slow simmer until thick. I like to do this for about an hour to an hour and a half. If it doesn't seem thick enough, I sprinkle in some mashed potato flakes to thicken. You never taste them. These are my go to thickeners. Season with salt and pepper. Make sure you taste before adding salt. Some hams becoming saltier the longer they are in the freezer. Serve~
