Pumpkin Streudel Muffins

1/2 cup pumpkin (w/spice okay)
1/2 cup milk
1/3 cup veg/canola oil
1 egg
1 3/4 cup all purpose flour
3 tsp. baking soda
1/2 cup sugar
3-4 oz cream cheese

Topping
1/4 cup brown sugar
1/2 tsp. cinnamon
1 Tbsp. butter

Mix pumpkin, milk, oil and egg. Add flour, baking soda and sugar. Fill muffin tin 1/4 and top with a piece of cream cheese. Add more muffin mix to the 1/2 way point. Top with streusel. Bake at 350 for 20 minutes. Yummy!!!
