Here are some ideas for cooler lunches. I freeze water bottles that fit perfectly inside the lunch box to keep these cool. By lunch, the water bottle has thawed fairly well.
Hard boiled eggs
Egg Salad
Shake Salad (put this in a container with enough room to shake it up once salad dressing is used)
Cheese and meat cubes
Popcorn
Apples with dips
Taco Salad
