Skillet Meatloaf

1 1/2 lb. ground beef
1/2 cup dry bread crumbs
1 egg
1/4 cup chopped onion
1 can tomato soup
1 tsp. salt
1 tsp. pepper
1/2 tsp. mustard
1/4 cup water
1/4 cup mozzarella cheese or sprinkle Parmesan cheese

Combine beef, bread crumbs, egg, onion, 1/4 can of tomato soup and spices. Mix well. Divide as evenly as possible to make mini meatloaves. Brown in a large skillet, then cover and allow to simmer for 25 minutes. Combine remaining tomato soup, mustard and water. Pour over meatloaves and simmer another 10 minutes. Before serving, sprinkle with cheese and enjoy~
